Description

A delightful twist on cinnamon rolls, these Lemon Rolls are soft, fluffy, and infused with zesty lemon goodness.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • Zest of 1 lemon
  • 1/4 cup fresh lemon juice
  • 1/2 cup powdered sugar for glaze
  • 12 tbsp lemon juice for glaze

Instructions

  1. Activate the Yeast: In a small bowl, dissolve the yeast in warm milk. Let it sit until foamy, about 5 minutes.
  2. Combine the Dry Ingredients: In a large bowl, mix together the flour, sugar, and salt.
  3. Create the Dough Mixture: Add the yeast mixture, melted butter, egg, lemon zest, and lemon juice into the dry ingredients. Mix until a dough forms.
  4. Knead the Dough: Knead the dough on a floured surface until smooth, about 5-10 minutes.
  5. First Rise: Place the kneaded dough in a greased bowl, cover it with a kitchen towel, and let it rise until doubled in size, about 1 hour.
  6. Roll Out the Dough: Once risen, roll out the dough into a rectangle. Spread a bit of butter on top, sprinkle with sugar, and roll it up tightly.
  7. Slice and Arrange: Cut the rolled dough into slices and place them in a greased baking dish.
  8. Second Rise: Let the rolls rise for another 30 minutes.
  9. Bake the Rolls: Preheat the oven to 350°F (175°C) and bake for 20-25 minutes until golden brown.
  10. Prepare the Glaze: Mix the powdered sugar with lemon juice and drizzle over the warm rolls.

Notes
