Description

Delightful sweet-tart lemon bars with fresh raspberries atop a buttery crust, perfect for summer gatherings.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup raspberries (fresh or frozen)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8×8 inch baking dish with parchment paper.
  2. In a bowl, mix the flour, powdered sugar, and softened butter until crumbly. Press into the bottom of the prepared baking dish.
  3. Bake for 15 minutes, until lightly golden.
  4. In another bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, baking powder, and salt until frothy.
  5. Gently fold in the raspberries.
  6. Pour the mixture over the pre-baked crust and smooth the top.
  7. Bake for an additional 25-30 minutes until set and slightly golden.
  8. Cool completely in the baking dish before slicing.
  9. If desired, dust with powdered sugar before serving.
