- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup granulated sugar
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 cup raspberries (fresh or frozen)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Grease and line an 8×8 inch baking dish with parchment paper.
- In a bowl, mix the flour, powdered sugar, and softened butter until crumbly. Press into the bottom of the prepared baking dish.
- Bake for 15 minutes, until lightly golden.
- In another bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, baking powder, and salt until frothy.
- Gently fold in the raspberries.
- Pour the mixture over the pre-baked crust and smooth the top.
- Bake for an additional 25-30 minutes until set and slightly golden.
- Cool completely in the baking dish before slicing.
- If desired, dust with powdered sugar before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 2 months.
