Ingredients

- 8 ounces pasta (such as rotini or penne)
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- Salt and pepper to taste
Instructions
- Boil the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, red onion, Parmesan cheese, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, lemon zest, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to three days. Just give it a toss before serving.
