- 1 bunch asparagus, trimmed
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 lemon, juiced and zested
- Salt and pepper to taste
- Parsley for garnish (optional)
Instructions
- Heat the olive oil in a large skillet over medium-high heat until shimmering.
- Add the minced garlic to the hot oil and sauté for about 30 seconds.
- Cook the asparagus in the skillet for about 3-4 minutes until tender but still crisp.
- Introduce the shrimp to the skillet, cooking until they turn pink, about 2-3 minutes.
- Stir in the lemon juice and zest, then season with salt and pepper to taste.
- Remove from heat and garnish with parsley if desired. Serve immediately.
Notes
Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in a skillet with a splash of lemon juice.
