Description

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • Salt and pepper to taste
  • Parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  2. Add the minced garlic to the hot oil and sauté for about 30 seconds.
  3. Cook the asparagus in the skillet for about 3-4 minutes until tender but still crisp.
  4. Introduce the shrimp to the skillet, cooking until they turn pink, about 2-3 minutes.
  5. Stir in the lemon juice and zest, then season with salt and pepper to taste.
  6. Remove from heat and garnish with parsley if desired. Serve immediately.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in a skillet with a splash of lemon juice.
