Description

Ingredients

  • 1 cup pearl couscous
  • 2 tablespoons butter
  • 1 lemon (juiced and zested)
  • 2 cups vegetable or chicken broth
  • Salt to taste
  • Pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. In a medium saucepan, bring the broth to a boil. Stir in the pearl couscous with a pinch of salt.
  2. Reduce the heat to low, cover, and simmer for about 10-12 minutes until tender and liquid is absorbed.
  3. Remove from heat and fold in the butter, lemon juice, and zest.
  4. Season with salt and pepper to taste.
  5. Fluff with a fork and garnish with fresh parsley before serving.

Notes

For extra flavor, toast the couscous before cooking. Leftovers can be stored in the fridge for up to 3 days.
