Description

A delightful homemade ice cream combining lavender and honey for a refreshing and elegant treat.


Ingredients

Scale
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup honey
  • 2 tablespoons dried lavender flowers
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 4 large egg yolks

Instructions

  1. In a saucepan, combine the heavy cream, whole milk, dried lavender, honey, and salt. Heat over medium until it just begins to simmer.
  2. Remove from heat and let steep for about 30 minutes.
  3. In a separate bowl, whisk the egg yolks until smooth.
  4. Gradually add the cooled cream mixture to the egg yolks, whisking constantly.
  5. Return the mixture to the saucepan and cook over low heat until it thickens slightly.
  6. Strain the mixture through a fine-mesh sieve to remove the lavender flowers.
  7. Stir in the vanilla extract.
  8. Chill the mixture in the refrigerator for at least 2 hours.
  9. Pour the chilled mixture into your ice cream maker and churn according to the manufacturer’s instructions.
  10. Transfer the ice cream to a container and freeze until firm.

Notes

Ensure culinary-grade lavender is used. Beware of serving honey to children under one year old.
