A delightful homemade ice cream combining lavender and honey for a refreshing and elegant treat.
Ingredients

- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup honey
- 2 tablespoons dried lavender flowers
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 4 large egg yolks
Instructions
- In a saucepan, combine the heavy cream, whole milk, dried lavender, honey, and salt. Heat over medium until it just begins to simmer.
- Remove from heat and let steep for about 30 minutes.
- In a separate bowl, whisk the egg yolks until smooth.
- Gradually add the cooled cream mixture to the egg yolks, whisking constantly.
- Return the mixture to the saucepan and cook over low heat until it thickens slightly.
- Strain the mixture through a fine-mesh sieve to remove the lavender flowers.
- Stir in the vanilla extract.
- Chill the mixture in the refrigerator for at least 2 hours.
- Pour the chilled mixture into your ice cream maker and churn according to the manufacturer’s instructions.
- Transfer the ice cream to a container and freeze until firm.
Notes
Ensure culinary-grade lavender is used. Beware of serving honey to children under one year old.
