- 4 boneless chicken breasts
- 1/2 cup orange juice
- 1/4 cup lime juice
- 1/4 cup pineapple juice
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- In a bowl, whisk together orange juice, lime juice, pineapple juice, olive oil, soy sauce, garlic, ginger, salt, and pepper to create the marinade.
- Place chicken breasts in a resealable bag or dish and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and discard the marinade.
- Grill the chicken for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
- Remove from the grill, let rest for a few minutes, then garnish with fresh cilantro before serving.
Notes
For an extra layer of flavor, consider adding crushed red pepper flakes to the marinade.
