- 1 cup almond flour
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 large eggs
- Olive oil spray
Instructions
- Preheat the oven to 425°F (220°C).
- Slice the zucchinis into thin, fry-like strips.
- Mix together almond flour, Parmesan cheese, garlic powder, paprika, salt, and pepper.
- Beat the eggs until well combined.
- Coat each zucchini fry in the egg mixture, then in the almond flour mixture.
- Arrange the coated zucchini fries on a baking sheet lined with parchment paper.
- Add a spritz of olive oil on top.
- Bake for 20-25 minutes or until golden and crispy, flipping halfway through.
- Serve warm with your favorite dipping sauce.
Notes
For extra flavor, add cayenne pepper or Italian herbs. Store leftovers in an airtight container for up to 3 days.
