Description

Delicious crispy zucchini fries, perfect for satisfying your snack cravings while keeping it keto-friendly.


Ingredients

Scale
  • 2 medium zucchinis
  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 large eggs
  • Olive oil spray

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice the zucchinis into thin, fry-like strips.
  3. Mix together almond flour, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  4. Beat the eggs until well combined.
  5. Coat each zucchini fry in the egg mixture, then in the almond flour mixture.
  6. Arrange the coated zucchini fries on a baking sheet lined with parchment paper.
  7. Add a spritz of olive oil on top.
  8. Bake for 20-25 minutes or until golden and crispy, flipping halfway through.
  9. Serve warm with your favorite dipping sauce.

Notes

For extra flavor, add cayenne pepper or Italian herbs. Store leftovers in an airtight container for up to 3 days.
