- 1 cup heavy cream
- 1 cup mascarpone cheese
- 1/2 cup powdered erythritol (or other keto sweetener)
- 1 teaspoon vanilla extract
- 1 cup strong brewed coffee, cooled
- 2 tablespoons cocoa powder
- Almond or coconut flour biscuits (for layering)
Instructions
- Whip the heavy cream, mascarpone cheese, powdered erythritol, and vanilla extract until smooth and creamy.
- Dip the almond or coconut flour biscuits in the cooled coffee and layer them in a dish.
- Spread half of the mascarpone mixture over the biscuits.
- Add a layer of sliced strawberries on top.
- Repeat the layers with the remaining biscuits, mascarpone mixture, and strawberries.
- Dust with cocoa powder before serving.
- Refrigerate for at least 2 hours before enjoying.
Notes
For a sweeter dessert, adjust the erythritol to taste. Use cooled coffee to prevent soggy biscuits.
