Description

A delightful twist on the classic Reuben sandwich, these Keto Crispy Reuben Roll-Ups capture all the flavors without the bread, making them perfect for a low-carb lifestyle.


Ingredients

Scale
  • 4 slices of corned beef
  • 4 slices of Swiss cheese
  • 1/2 cup of sauerkraut, drained
  • 2 tablespoons of mustard
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Instructions

  1. Lay out the corned beef slices on a clean work surface and spread mustard evenly over each slice.
  2. Place a slice of Swiss cheese on top of each corned beef slice.
  3. Add a spoonful of sauerkraut on top of the cheese.
  4. Roll up each slice tightly, securing with a toothpick if necessary.
  5. In a skillet over medium heat, add olive oil and allow it to heat until it shimmers.
  6. Place the roll-ups seam side down in the skillet and cook until golden brown and crispy, about 3-4 minutes per side.
  7. Season with salt and pepper to taste before serving.
