Description
A deliciously refreshing pasta salad combining kale, cherry tomatoes, and Caesar dressing for a satisfying meal.
Ingredients
Scale
- 8 oz pasta (fusilli or rotini)
- 2 cups kale, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup Parmesan cheese, grated
- 1/4 cup Caesar dressing
- 1/4 cup croutons
- Salt and pepper to taste
Instructions
- Cook the pasta in salted boiling water until al dente, then drain and cool.
- In a bowl, combine chopped kale and halved cherry tomatoes.
- Add cooled pasta and gently mix with the veggies.
- Drizzle Caesar dressing over the mixture and toss well.
- Sprinkle grated Parmesan and croutons on top, gently folding them in.
- Season with salt and pepper as desired, serve immediately or refrigerate for 30 minutes.
Notes
Make sure to rinse kale well. You can substitute different greens or cheese for variations.
