Description

A deliciously refreshing pasta salad combining kale, cherry tomatoes, and Caesar dressing for a satisfying meal.


Ingredients

Scale
  • 8 oz pasta (fusilli or rotini)
  • 2 cups kale, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup Caesar dressing
  • 1/4 cup croutons
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente, then drain and cool.
  2. In a bowl, combine chopped kale and halved cherry tomatoes.
  3. Add cooled pasta and gently mix with the veggies.
  4. Drizzle Caesar dressing over the mixture and toss well.
  5. Sprinkle grated Parmesan and croutons on top, gently folding them in.
  6. Season with salt and pepper as desired, serve immediately or refrigerate for 30 minutes.

Notes

Make sure to rinse kale well. You can substitute different greens or cheese for variations.
