Description

A comforting and hearty soup filled with flavorful Italian sausage and creamy white beans, perfect for chilly evenings.


Ingredients

  • 1 lb Italian sausage
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Browning the sausage in a large pot over medium heat.
  2. Removing the sausage from the pot and setting it aside.
  3. Sautéing the chopped onion, carrots, and celery until softened, about 5 minutes.
  4. Stirring in the minced garlic and cooking for another minute.
  5. Returning the browned sausage to the pot and adding the chicken broth, white beans, diced tomatoes, thyme, and oregano.
  6. Increasing heat to bring everything to a boil, then reducing heat and simmering for 20-30 minutes.
  7. Tasting the soup and seasoning with salt and pepper to your liking.
  8. Serving hot, garnished with freshly chopped parsley.

Notes

This soup gets better over time, and can be frozen for up to 3 months.
