- 1 lb Italian sausage
- 1 can (15 oz) white beans, drained and rinsed
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Browning the sausage in a large pot over medium heat.
- Removing the sausage from the pot and setting it aside.
- Sautéing the chopped onion, carrots, and celery until softened, about 5 minutes.
- Stirring in the minced garlic and cooking for another minute.
- Returning the browned sausage to the pot and adding the chicken broth, white beans, diced tomatoes, thyme, and oregano.
- Increasing heat to bring everything to a boil, then reducing heat and simmering for 20-30 minutes.
- Tasting the soup and seasoning with salt and pepper to your liking.
- Serving hot, garnished with freshly chopped parsley.
Notes
This soup gets better over time, and can be frozen for up to 3 months.
