- 12 oz cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, diced
- 1/2 cup black olives, sliced
- 1/2 cup pepperoncini, sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup grated Parmesan cheese
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the cheese tortellini according to package instructions, then drain and let cool.
- Combine the cooled tortellini, cherry tomatoes, cucumber, red onion, black olives, pepperoncini, and parsley in a large bowl.
- Prepare the dressing by whisking together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper in a small bowl.
- Dress the salad by pouring the dressing over and tossing to combine.
