Ingredients

  • 12 oz cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup pepperoncini, sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the cheese tortellini according to package instructions, then drain and let cool.
  2. Combine the cooled tortellini, cherry tomatoes, cucumber, red onion, black olives, pepperoncini, and parsley in a large bowl.
  3. Prepare the dressing by whisking together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper in a small bowl.
  4. Dress the salad by pouring the dressing over and tossing to combine.
