- 2 cups grated carrots
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large bowl, mix the grated carrots, granulated sugar, brown sugar, and vegetable oil until well combined.
- Add the eggs one at a time, mixing thoroughly after each addition.
- In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- While the bars cool, beat together the cream cheese, powdered sugar, and vanilla extract until smooth.
- Once cooled, spread the cream cheese mixture over the bars and cut them into squares.
- Serve and enjoy!
