Description

Delicious carrot cake bars with a rich cream cheese frosting, perfect for sharing with family and friends.


Ingredients

  • 2 cups grated carrots
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, mix the grated carrots, granulated sugar, brown sugar, and vegetable oil until well combined.
  3. Add the eggs one at a time, mixing thoroughly after each addition.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. <liGradually add the dry ingredients to the wet mixture and stir until just combined.

  6. Pour the batter into the prepared baking dish and spread it evenly.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. While the bars cool, beat together the cream cheese, powdered sugar, and vanilla extract until smooth.
  9. Once cooled, spread the cream cheese mixture over the bars and cut them into squares.
  10. Serve and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days. These bars can be enjoyed chilled or at room temperature.
