Ingredients

  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then mix in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt, then gradually mix this into the butter mixture.
  5. Chill the dough in the refrigerator for about 30 minutes.
  6. Scoop tablespoon-sized portions of the dough onto the prepared baking sheet.
  7. Bake for 10-12 minutes until the edges are golden.
  8. Heat the heavy cream in a saucepan until simmering.
  9. Spread a thin layer of heavy cream over each cookie and sprinkle sugar on top.
  10. Using a kitchen torch, caramelize the sugar until golden and bubbly.
  11. Allow the cookies to cool completely before serving.

Notes

Ensure your butter is at room temperature for optimal creaming. If you don’t have a torch, you can broil the cookies for a few seconds.
