Ingredients

  • 4 cups vegetable or chicken broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until translucent.
  2. Add the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  3. Sauté the diced carrots and celery for another 5 minutes.
  4. Pour in the vegetable or chicken broth and bring to a boil.
  5. Reduce heat and simmer for about 15-20 minutes until the vegetables are tender.
  6. Stir in the lemon juice, and season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.
