Description

A delightful summer treat combining creamy cream cheese, sweet honey, and juicy fresh peaches in a fluffy cupcake.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup cream cheese, softened
  • 1/2 cup honey
  • 1 cup diced fresh peaches
  • 1/4 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition, and mix in vanilla extract and honey.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk.
  6. Gently fold in the softened cream cheese and diced fresh peaches.
  7. Fill the cupcake liners about 2/3 full with the batter.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let the cupcakes cool before serving.
