Ingredients

  • 1/4 cup honey
  • 1/4 cup lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a bowl, mix honey, lime juice, garlic powder, paprika, salt, and pepper until well combined.
  2. Place chicken breasts in the honey-lime mixture, ensuring they’re well coated. Let marinate for at least 30 minutes.
  3. Heat a grill or skillet over medium heat. Remove chicken from the marinade and grill or cook until fully cooked, about 6-7 minutes on each side.
  4. Once cooked, let the chicken rest for a minute, then slice it into strips.
  5. On a plate, place a generous layer of rice as the base. Follow with the sliced chicken, then add the avocado, fanning it out.
  6. Top with fresh cilantro and serve immediately.

Notes

For extra flavor, marinate the chicken overnight. You can substitute honey with maple syrup for a vegan option.
