Description
A delightful dish featuring marinated grilled chicken layered with avocado and rice, perfect for summer evenings.
Ingredients
Scale
- 2 boneless, skinless chicken breasts
- 1/4 cup honey
- 1/4 cup lime juice
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups cooked rice
- 1 avocado, sliced
- 1/4 cup fresh cilantro, chopped
Instructions
- In a bowl, mix honey, lime juice, garlic powder, paprika, salt, and pepper until well combined.
- Place chicken breasts in the honey-lime mixture, ensuring they’re well coated. Let marinate for at least 30 minutes.
- Heat a grill or skillet over medium heat. Remove chicken from the marinade and grill or cook until fully cooked, about 6-7 minutes on each side.
- Once cooked, let the chicken rest for a minute, then slice it into strips.
- On a plate, place a generous layer of rice as the base. Follow with the sliced chicken, then add the avocado, fanning it out.
- Top with fresh cilantro and serve immediately.
Notes
For extra flavor, marinate the chicken overnight. You can substitute honey with maple syrup for a vegan option.
