Craft nostalgic pop tarts from scratch using a delightful sourdough twist, filled with your favorite jam.
Ingredients

- 1 cup sourdough starter
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 tsp salt
- 1/4 cup sugar
- 1/4 cup cold water
- 1/2 cup fruit jam or filling of choice
- 1 egg (for egg wash)
- Powdered sugar (for icing, optional)
Instructions
- In a large bowl, mix the sourdough starter, flour, cold butter, salt, and sugar until crumbly.
- Gradually add the cold water, mixing until a dough forms.
- Divide the dough in half, shape into rectangles, wrap in plastic, and refrigerate for at least 1 hour.
- Preheat the oven to 350°F (175°C).
- Roll out one dough rectangle on a floured surface to about 1/8 inch thickness. Cut into rectangles.
- Place a spoonful of jam in the center of half the rectangles, then top with remaining rectangles. Seal the edges with a fork.
- Place on a baking sheet lined with parchment paper.
- Beat the egg and brush on top of each Pop Tart.
- Bake for 20–25 minutes until golden.
- Let cool and drizzle with powdered sugar icing if desired.
Notes
For an extra touch, press down the edges of the pop tarts with a fork for a professional look. Experiment with various jams and fillings for unique flavors.
