- 2 cups cooked chicken, shredded
- 1 cup fresh spinach, chopped
- 1 cup artichoke hearts, chopped
- 1 cup Greek yogurt
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/2 teaspoon red pepper flakes (optional)
- 2 cups cooked whole wheat pasta or quinoa (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the shredded chicken, chopped spinach, chopped artichoke hearts, Greek yogurt, mozzarella cheese, Parmesan cheese, garlic powder, onion powder, salt, pepper, and red pepper flakes in a large mixing bowl.
- Add in 2 cups of cooked whole wheat pasta or quinoa if desired and stir until all ingredients are evenly coated.
- Transfer the mixture to a greased casserole dish, spreading it out evenly.
- Bake for 25-30 minutes until the top is golden brown and bubbly.
- Cool the casserole for a few minutes before serving.
