A creamy, nutritious casserole packed with protein, fresh vegetables, and delicious cheese.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup fresh spinach, chopped
  • 1 cup artichoke hearts, chopped
  • 1 cup Greek yogurt
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 cups cooked whole wheat pasta or quinoa (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, chopped spinach, chopped artichoke hearts, Greek yogurt, mozzarella cheese, Parmesan cheese, garlic powder, onion powder, salt, pepper, and red pepper flakes in a large mixing bowl.
  3. Add in 2 cups of cooked whole wheat pasta or quinoa if desired and stir until all ingredients are evenly coated.
  4. Transfer the mixture to a greased casserole dish, spreading it out evenly.
  5. Bake for 25-30 minutes until the top is golden brown and bubbly.
  6. Cool the casserole for a few minutes before serving.
