Instructions
- Preheat your oven to 350°F (175°C).
- Combine the egg whites, cottage cheese, and diced vegetables in a mixing bowl. Add shredded cheese if desired, and season with salt and pepper.

- Pour the egg mixture into the muffin tin, filling each cup about two-thirds full.
