Description

A delicious and quick High-Protein Chicken Ranch Quesadilla made with tender shredded chicken, tangy ranch dressing, and melted cheese between soft tortillas.


Ingredients

  • 2 cooked chicken breasts, shredded
  • 1 cup shredded cheese (like cheddar or mozzarella)
  • 1/2 cup ranch dressing
  • 4 flour tortillas
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Sliced green onions (optional)
  • Sliced jalapeños (optional)

Instructions

  1. In a mixing bowl, combine shredded chicken, ranch dressing, cheese, salt, and pepper. Stir until well coated.
  2. Heat olive oil in a skillet over medium heat until shimmering.
  3. Place one tortilla in the skillet and spread half of the chicken mixture over it.
  4. Top with another tortilla and cook until the bottom is golden brown, about 3-4 minutes.
  5. Carefully flip the quesadilla and cook the other side until golden and cheese is melted, about 3-4 more minutes.
  6. Remove from the skillet, slice into wedges, and serve with extra ranch dressing if desired. Garnish with sliced green onions and jalapeños.
