A delicious and quick High-Protein Chicken Ranch Quesadilla made with tender shredded chicken, tangy ranch dressing, and melted cheese between soft tortillas.

- 2 cooked chicken breasts, shredded
- 1 cup shredded cheese (like cheddar or mozzarella)
- 1/2 cup ranch dressing
- 4 flour tortillas
- 1 tablespoon olive oil
- Salt and pepper to taste
- Sliced green onions (optional)
- Sliced jalapeños (optional)
Instructions
- In a mixing bowl, combine shredded chicken, ranch dressing, cheese, salt, and pepper. Stir until well coated.
- Heat olive oil in a skillet over medium heat until shimmering.
- Place one tortilla in the skillet and spread half of the chicken mixture over it.
- Top with another tortilla and cook until the bottom is golden brown, about 3-4 minutes.
- Carefully flip the quesadilla and cook the other side until golden and cheese is melted, about 3-4 more minutes.
- Remove from the skillet, slice into wedges, and serve with extra ranch dressing if desired. Garnish with sliced green onions and jalapeños.
