Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold butter, cubed
  • 1 cup cottage cheese
  • 1/4 cup milk
  • 1 tablespoon chopped fresh herbs (such as chives, parsley, or dill)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix together the flour, baking powder, and salt in a large bowl.
  3. Add the cold, cubed butter to the flour mixture and cut it in until it resembles coarse crumbs.
  4. Stir in the cottage cheese, milk, and fresh herbs until just combined.
  5. Knead the dough gently on a floured surface a few times to bring it together.
  6. Roll out the dough to about 1 inch thick.
  7. Cut into rounds using a biscuit cutter or glass.
  8. Bake for 15-20 minutes until golden brown and serve warm.

Notes

Don’t overmix the dough to keep the biscuits tender. Experiment with different herbs for various flavors.
