Description

Delightful and crispy zucchini fritters that are perfect for the whole family and packed with flavor.


Ingredients

Scale
  • 2 medium zucchinis
  • 1/2 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup chopped green onions
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil for frying

Instructions

  1. Grate the zucchinis and place them in a clean kitchen towel. Squeeze out excess moisture.
  2. Mix the grated zucchini with salt and let it sit for about 10 minutes.
  3. Combine the all-purpose flour, Parmesan cheese, egg, chopped green onions, garlic powder, and black pepper in another bowl.
  4. Add the drained grated zucchini into the flour mixture and stir until combined.
  5. Heat the olive oil in a skillet over medium heat until it shimmers.
  6. Drop dollops of the mixture into the skillet and flatten them slightly.
  7. Cook for about 3-4 minutes on each side until golden brown.
  8. Remove the fritters from the skillet and drain on paper towels. Serve warm.

Notes

Serve with a yogurt dip or spritz of lemon for added flavor. Can be stored in an airtight container for up to 3 days.
