Ingredients

- 2 medium zucchinis
- 1/2 teaspoon salt
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/4 cup chopped green onions
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil for frying
Instructions
- Grate the zucchinis and place them in a clean kitchen towel. Squeeze out excess moisture.
- Mix the grated zucchini with salt and let it sit for about 10 minutes.
- Combine the all-purpose flour, Parmesan cheese, egg, chopped green onions, garlic powder, and black pepper in another bowl.
- Add the drained grated zucchini into the flour mixture and stir until combined.
- Heat the olive oil in a skillet over medium heat until it shimmers.
- Drop dollops of the mixture into the skillet and flatten them slightly.
- Cook for about 3-4 minutes on each side until golden brown.
- Remove the fritters from the skillet and drain on paper towels. Serve warm.
Notes
Serve with a yogurt dip or spritz of lemon for added flavor. Can be stored in an airtight container for up to 3 days.
