Ingredients

  • 1 cup bell peppers, chopped (any color)

  • 1 cup pineapple chunks (fresh or canned in juice)
  • 1/4 cup coconut aminos
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: green onions and sesame seeds for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the cubed chicken and season generously with salt and pepper. Cook until browned and cooked through, about 7-10 minutes.
  2. Add the chopped onion and bell peppers to the skillet. Sauté until they begin to soften, about 5 minutes.
  3. Stir in the pineapple chunks, coconut aminos, apple cider vinegar, and honey (or maple syrup). Cook for another 5-7 minutes until everything is heated through.
  4. Serve hot, garnished with green onions and sesame seeds if desired.
