Ingredients

- 1 cup rolled oats
- 1/2 cup pumpkin puree
- 1/4 cup honey or maple syrup
- 1/4 cup almond butter or peanut butter
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chocolate chips or nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine rolled oats, pumpkin puree, honey (or maple syrup), and almond butter (or peanut butter) until well mixed.
- Sprinkle in the cinnamon, nutmeg, baking powder, and salt. Mix until well combined.
- If desired, fold in chocolate chips or nuts into the mixture.
- Using a spoon, drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Store leftover cookies in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate for up to a week or freeze for up to a month.
