Description

A vibrant and hearty salad made with three types of beans, fresh vegetables, and a zesty dressing.


Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 1 can of black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, diced
  • 1 bell pepper, diced
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Gather fresh ingredients in your kitchen.
  2. Combine the kidney beans, chickpeas, and black beans in a large bowl.
  3. Add the halved cherry tomatoes, diced red onion, diced bell pepper, and fresh parsley.
  4. Whisk together the olive oil, apple cider vinegar, salt, and pepper in a small bowl.
  5. Dress the salad mixture with the dressing.
