Ingredients

  • 2 cups cooked pasta
  • 1 cup cooked chicken, shredded
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked pasta, shredded chicken, diced avocado, cherry tomatoes, cucumber, red onion, and parsley.
  2. In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the pasta salad and toss gently to combine all the ingredients.

Notes
