- 2 cups cooked pasta
- 1 cup cooked chicken, shredded
- 1 ripe avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cooked pasta, shredded chicken, diced avocado, cherry tomatoes, cucumber, red onion, and parsley.
- In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
