Description

A nourishing and comforting casserole made with shredded chicken and cauliflower rice, perfect for cozy family dinners.


Ingredients

  • 3 cups shredded chicken (rotisserie or cooked)
  • 4 cups cauliflower rice (store-bought or homemade)
  • 8 oz cream cheese (softened) or Greek yogurt
  • 1 cup shredded cheddar cheese (divided)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • Optional: 1 cup chopped spinach, broccoli florets, or sliced mushrooms

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. Sauté the cauliflower rice in olive oil over medium heat for 5-7 minutes.
  3. Mix the shredded chicken, sautéed cauliflower rice, cream cheese, half of the cheddar cheese, and seasonings in a large bowl.
  4. Transfer the mixture into a greased 9×13-inch baking dish and top with remaining cheddar cheese.
  5. Bake uncovered for 20-25 minutes until the cheese is melted and bubbly.

Notes

Leftovers can be stored in an airtight container for 3-4 days or frozen for up to 3 months.
