- 3 cups shredded chicken (rotisserie or cooked)
- 4 cups cauliflower rice (store-bought or homemade)
- 8 oz cream cheese (softened) or Greek yogurt
- 1 cup shredded cheddar cheese (divided)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp salt (adjust to taste)
- 1/2 tsp black pepper
- 1 tbsp olive oil
- Optional: 1 cup chopped spinach, broccoli florets, or sliced mushrooms
Instructions
- Preheat your oven to 375 degrees F (190 degrees C).
- Sauté the cauliflower rice in olive oil over medium heat for 5-7 minutes.
- Mix the shredded chicken, sautéed cauliflower rice, cream cheese, half of the cheddar cheese, and seasonings in a large bowl.
- Transfer the mixture into a greased 9×13-inch baking dish and top with remaining cheddar cheese.
- Bake uncovered for 20-25 minutes until the cheese is melted and bubbly.
Notes
Leftovers can be stored in an airtight container for 3-4 days or frozen for up to 3 months.
