Description

A healthier homage to the classic Almond Joy candy bar, these treats are made with almond butter and dark chocolate, providing a delicious and nutty flavor without the guilt.


Ingredients

Scale
  • 1 cup unsweetened shredded coconut
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 cup whole almonds
  • 1/2 cup dark chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. In a bowl, mix the shredded coconut, almond butter, honey (or maple syrup), and vanilla extract until well combined.
  2. Form the mixture into small bars using your hands, dampening your hands slightly to prevent sticking. Press an almond into the center of each bar.
  3. Place the bars in the freezer for about 30 minutes until firm.
  4. In a small saucepan, melt the dark chocolate chips and coconut oil together until smooth.
  5. Dip each bar into the chocolate mixture, coating evenly, and let the excess chocolate drip off.
  6. Place the chocolate-covered bars back on the tray and refrigerate until the chocolate hardens.
