- 1 cup unsweetened shredded coconut
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 cup whole almonds
- 1/2 cup dark chocolate chips
- 1 tablespoon coconut oil
Instructions
- In a bowl, mix the shredded coconut, almond butter, honey (or maple syrup), and vanilla extract until well combined.
- Form the mixture into small bars using your hands, dampening your hands slightly to prevent sticking. Press an almond into the center of each bar.
- Place the bars in the freezer for about 30 minutes until firm.
- In a small saucepan, melt the dark chocolate chips and coconut oil together until smooth.
- Dip each bar into the chocolate mixture, coating evenly, and let the excess chocolate drip off.
- Place the chocolate-covered bars back on the tray and refrigerate until the chocolate hardens.
