Ingredients

  • 1 lb ham, diced
  • 1 cup dried navy beans
  • 4 cups chicken broth
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Rinse and soak the beans under cool water overnight in a large bowl of water.
  2. Sauté the diced ham in a large pot over medium heat until browned, about 5-7 minutes.
  3. Add the diced onions, sliced carrots, celery, and minced garlic and cook until softened, about 5-7 minutes.
  4. Incorporate the soaked beans, chicken broth, bay leaf, salt, and pepper. Bring to a boil while stirring.
  5. Reduce the heat, cover, and let simmer for about 1 to 1.5 hours until the beans are tender.
  6. Remove the bay leaf, taste the soup, and adjust seasoning if needed.
  7. Serve hot, garnishing with a sprinkle of fresh parsley.

Notes

Make sure to soak the beans overnight for the best texture. This soup pairs beautifully with crusty bread or a side salad.
