- 1 cup dried navy beans
- 4 cups chicken broth
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 1 bay leaf

- Fresh parsley for garnish (optional)
Instructions
- Rinse and soak the beans under cool water overnight in a large bowl of water.
- Sauté the diced ham in a large pot over medium heat until browned, about 5-7 minutes.
- Add the diced onions, sliced carrots, celery, and minced garlic and cook until softened, about 5-7 minutes.
- Incorporate the soaked beans, chicken broth, bay leaf, salt, and pepper. Bring to a boil while stirring.
- Reduce the heat, cover, and let simmer for about 1 to 1.5 hours until the beans are tender.
- Remove the bay leaf, taste the soup, and adjust seasoning if needed.
- Serve hot, garnishing with a sprinkle of fresh parsley.
Notes
Make sure to soak the beans overnight for the best texture. This soup pairs beautifully with crusty bread or a side salad.
