A comforting and easy-to-prepare bake that combines ground turkey and sweet potatoes, perfect for family dinners.
Ingredients

- 1 lb ground turkey
- 2 medium sweet potatoes
- 2 small zucchini
- 2/3 cup shredded parmesan cheese
- 1 1/2 tsp garlic powder
- 1 tsp rosemary
- 5 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F.
- Peel and chop sweet potatoes into bite-sized pieces, toss with 2 tbsp olive oil, 1/2 tsp garlic powder, 1/2 tsp rosemary, salt, and pepper.
- Bake sweet potatoes for 30 minutes.
- Heat 1 tbsp olive oil in a pan, add ground turkey seasoned with 1 tsp garlic powder, 1/2 tsp rosemary, salt, and pepper. Cook until browned (5-7 minutes).
- Chop zucchini into slices and quarter those slices.
- Mix roasted sweet potatoes with cooked turkey and chopped zucchini.
- Bake the mix for another 10 minutes.
- Drizzle in 2 tbsp olive oil, sprinkle parmesan on top, and return to the oven for another 10 minutes until cheese is golden.
Notes
Feel free to add different vegetables or switch ground turkey for ground beef. This dish is great for leftovers!
