Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups cauliflower rice
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion, garlic, and bell pepper, cooking until soft.
  3. Add the ground beef to the skillet, cooking until browned and draining excess fat.
  4. Stir in the diced tomatoes, cauliflower rice, Italian seasoning, salt, and pepper. Mix well and let simmer for 5 minutes.
  5. Transfer the mixture to a greased baking dish and top with shredded cheese.
  6. Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
