- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 2 cups cauliflower rice
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion, garlic, and bell pepper, cooking until soft.
- Add the ground beef to the skillet, cooking until browned and draining excess fat.
- Stir in the diced tomatoes, cauliflower rice, Italian seasoning, salt, and pepper. Mix well and let simmer for 5 minutes.
- Transfer the mixture to a greased baking dish and top with shredded cheese.
- Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
