- 1 lb shrimp
- 2 tbsp olive oil
- 1 avocado, diced
- 1 cup corn (canned or grilled)
- 1/2 red onion, diced
- 1/4 cup cilantro, chopped
- 2 tbsp lime juice
- 2 cloves garlic, minced
- 1/2 cup sour cream
- Salt to taste
- Pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- In a mixing bowl, toss the shrimp with olive oil, salt, and pepper.
- Place the shrimp on the grill and cook for about 3-4 minutes on each side until opaque.
- In another bowl, combine corn, diced avocado, red onion, cilantro, and lime juice to make the corn salsa.
- In a separate bowl, mix sour cream with minced garlic, salt, and pepper for the creamy garlic sauce.
- Assemble your bowl with grilled shrimp, topped with corn salsa and creamy garlic sauce.
