Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 avocados, diced
  • 1 cup corn (fresh or frozen)
  • 1/2 cup red onion, diced
  • 1/2 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. Mix the shrimp with olive oil, salt, and pepper in a bowl.
  3. Place the shrimp on the grill and cook for about 2-3 minutes on each side until pink and cooked through.
  4. Combine corn, diced red onion, halved cherry tomatoes, and diced avocado in another bowl.
