- 2 medium zucchinis, grated
- 1 cup feta cheese, crumbled
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/4 cup fresh parsley, chopped
- 1/4 cup green onions, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Oil for frying
Instructions
- Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
- In a large bowl, combine the grated zucchini, feta cheese, flour, eggs, parsley, green onions, salt, and pepper. Mix well until fully combined.
- Heat oil in a skillet over medium heat.
- Drop spoonfuls of the mixture into the hot oil and flatten them slightly to form fritters.
- Cook for about 3-4 minutes on each side or until golden brown.
- Remove from skillet and drain on paper towels. Serve warm.
Notes
For a gluten-free version, substitute all-purpose flour with chickpea flour. Pair these fritters with tzatziki sauce or Greek salad for a light meal.
