Description

Delicious Greek Zucchini Fritters made with fresh zucchini, creamy feta, and vibrant herbs. Perfect for a snack or light meal.


Ingredients

  • 2 medium zucchinis, grated
  • 1 cup feta cheese, crumbled
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup green onions, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Oil for frying

Instructions

  1. Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
  2. In a large bowl, combine the grated zucchini, feta cheese, flour, eggs, parsley, green onions, salt, and pepper. Mix well until fully combined.
  3. Heat oil in a skillet over medium heat.
  4. Drop spoonfuls of the mixture into the hot oil and flatten them slightly to form fritters.
  5. Cook for about 3-4 minutes on each side or until golden brown.
  6. Remove from skillet and drain on paper towels. Serve warm.

Notes

For a gluten-free version, substitute all-purpose flour with chickpea flour. Pair these fritters with tzatziki sauce or Greek salad for a light meal.
