Description

A delightful blend of chewy and crunchy textures with sweet coconut, these chews evoke warm memories and are perfect for all occasions.


Ingredients

Scale
  • 2 cups shredded coconut
  • 1 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional)
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a large bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, chopped nuts (if using), and salt.
  3. Stir until all the ingredients are well combined.
  4. Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper, spacing them about an inch apart.
  5. Bake for 15-20 minutes or until the chews are beautifully golden brown.
  6. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Great to enjoy with tea or coffee, and can be stored in an airtight container for up to a week.
