Description

A delicious, one-dish Mediterranean meal with gluten-free pasta, colorful veggies, and feta cheese, perfect for sharing with friends and family.


Ingredients

  • 2 cups gluten-free pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup zucchini, diced
  • 1 cup bell peppers, diced
  • 1/2 cup red onion, diced
  • 1/2 cup olives, sliced
  • 1 cup feta cheese, crumbled
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the gluten-free pasta according to package instructions. Once done, drain it well and set aside.
  3. In a large bowl, combine the cooked pasta, cherry tomatoes, zucchini, bell peppers, red onion, olives, feta cheese, and garlic.
  4. Drizzle olive oil over the mixture and sprinkle with oregano, basil, salt, and pepper. Mix gently.
  5. Transfer the mixture into a greased baking dish, spreading it evenly.
  6. Bake for 25-30 minutes or until the vegetables are tender and the top is golden.
  7. Serve warm and enjoy!

Notes

Leftovers can be stored in an airtight container in the fridge for up to 4 days. Reheat in the oven or microwave.
