Ingredients

- 2 cups gluten-free pasta
- 1 cup cherry tomatoes, halved
- 1 cup zucchini, diced
- 1 cup bell peppers, diced
- 1/2 cup red onion, diced
- 1/2 cup olives, sliced
- 1 cup feta cheese, crumbled
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the gluten-free pasta according to package instructions. Once done, drain it well and set aside.
- In a large bowl, combine the cooked pasta, cherry tomatoes, zucchini, bell peppers, red onion, olives, feta cheese, and garlic.
- Drizzle olive oil over the mixture and sprinkle with oregano, basil, salt, and pepper. Mix gently.
- Transfer the mixture into a greased baking dish, spreading it evenly.
- Bake for 25-30 minutes or until the vegetables are tender and the top is golden.
- Serve warm and enjoy!
Notes
Leftovers can be stored in an airtight container in the fridge for up to 4 days. Reheat in the oven or microwave.
