Description

A vibrant and comforting soup combining ginger, lime, chicken, and jasmine rice for a fulfilling meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 sweet onion, diced
  • 6 garlic cloves, minced
  • 3 to 4 tablespoons minced fresh ginger
  • Kosher salt and pepper to taste
  • 1 1/2 cups cooked, shredded chicken
  • 4 cups chicken stock
  • 1 teaspoon freshly grated lime zest
  • Lime wedges, for serving
  • Cilantro, for garnish
  • 2 cups jasmine rice
  • 3 cups water or chicken stock
  • 1 tablespoon unsalted butter
  • 2 limes (zest freshly grated, 3 tablespoons fresh lime juice)
  • 3/4 cup chopped cilantro

Instructions

  1. Heat olive oil in a large stock pot over medium-low heat. Stir in diced onions, minced garlic, and fresh ginger with salt and pepper. Cook until the onions soften.
  2. Add shredded chicken, chicken stock, and lime zest. Bring to a gentle boil, reduce to a simmer, and cover. Simmer for 20 to 30 minutes.
  3. Rinse jasmine rice under cold water. In a separate saucepan, bring water or chicken stock to boil. Stir in rice, unsalted butter, and salt. Once boiling, reduce to a simmer, cover, and cook for 12 to 15 minutes.
  4. Remove lid from the rice and stir in lime zest, lime juice, and chopped cilantro.
  5. To serve, scoop jasmine rice into bowls and ladle soup over. Top with cilantro and serve with lime wedges.

Notes

Let the onions caramelize slightly for deeper flavor. Use leftover roasted chicken for enhanced taste.
