Description

Delightfully soft and cake-like cookies infused with cinnamon, reminiscent of cozy moments in Stars Hollow.


Ingredients

  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup sour cream
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup streusel topping (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the creamed mixture, alternating with the sour cream.
  6. If using, fold in the chopped nuts gently.
  7. Drop spoonfuls of the dough onto lined baking sheets and sprinkle with streusel topping.
  8. Bake for 10-12 minutes or until golden brown. Allow to cool on a wire rack.
