Description

Ingredients

  • 2 cups fresh spinach
  • 1 can (15 oz) white beans (cannellini or great northern), drained and rinsed
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon lemon juice (optional)
  • Grated Parmesan cheese (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic to the hot oil and sauté for about 1 minute until fragrant.
  3. Layer in the fresh spinach next and cook until wilted, about 2-3 minutes.
  4. Stir in the white beans and heat through for another 2 minutes.
  5. Season with salt, pepper, and lemon juice if using.
  6. Serve warm, topped with grated Parmesan cheese if desired.
