Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic to the hot oil and sauté for about 1 minute until fragrant.
- Layer in the fresh spinach next and cook until wilted, about 2-3 minutes.
- Stir in the white beans and heat through for another 2 minutes.
- Season with salt, pepper, and lemon juice if using.
