Description

A refreshing twist on the classic Italian dessert featuring layers of mascarpone cream, coffee-soaked ladyfingers, and fresh raspberries.


Ingredients

Scale
  • 1 cup fresh raspberries
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1 cup brewed espresso, cooled
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 24 ladyfinger cookies
  • Cocoa powder for dusting

Instructions

  1. In a bowl, whip the heavy cream until soft peaks form.
  2. In another bowl, mix together the mascarpone cheese, sugar, and vanilla extract until smooth.
  3. Gently fold the whipped cream into the mascarpone mixture.
  4. Dip each ladyfinger into the brewed espresso briefly.
  5. Layer half of the dipped ladyfingers in a serving dish, followed by half of the mascarpone mixture and half of the raspberries.
  6. Repeat the layers with the remaining ingredients.
  7. Cover and refrigerate for at least 4 hours.
  8. Before serving, dust the tiramisu with cocoa powder and garnish with additional raspberries.

Notes

Store in the refrigerator for up to 3 days. Can be made a day in advance for improved flavor.
