Description

Light and fluffy flourless pancakes made with cottage cheese, perfect for a nutritious breakfast.


Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup oats
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions

  1. In a blender, combine cottage cheese, eggs, oats, vanilla extract, baking powder, and salt. Blend until smooth.
  2. Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.
  3. Pour about 1/4 cup of the batter onto the skillet for each pancake.
  4. Cook for 2-3 minutes or until bubbles form, then flip and cook for an additional 2-3 minutes until golden brown.
  5. Serve warm with your favorite toppings.

Notes
