- 1 cup cottage cheese
- 4 large eggs
- 1/2 cup oats
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- Pinch of salt
Instructions
- In a blender, combine cottage cheese, eggs, oats, vanilla extract, baking powder, and salt. Blend until smooth.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.
- Pour about 1/4 cup of the batter onto the skillet for each pancake.
- Cook for 2-3 minutes or until bubbles form, then flip and cook for an additional 2-3 minutes until golden brown.
- Serve warm with your favorite toppings.
Notes
These pancakes are best enjoyed fresh but can be stored in an airtight container in the fridge for up to 3 days.
