Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 avocado, sliced
  • 1 tomato, sliced
  • 1/2 cup lettuce, shredded
  • 2 bolillo rolls or sandwich buns
  • Mayonnaise or crema (optional)
  • Jalapeños (optional)

Instructions

  1. Season the chicken breasts with chili powder, garlic powder, cumin, salt, and pepper.
  2. Heat the olive oil in a skillet over medium heat and cook the seasoned chicken for 6-7 minutes per side.
  3. Slice the bolillo rolls in half and optionally toast them in the skillet.
  4. Spread mayonnaise or crema on both halves of the rolls.
  5. Layer the sliced chicken, avocado, tomato, and shredded lettuce on the bottom half of each roll.
  6. Add jalapeño slices if desired.
  7. Top with the other half of the bun, press down gently, and serve immediately.
