A delightful quiche combining fluffy eggs, savory ham, and rich cheeses, topped with luscious homemade hollandaise sauce. Perfect for brunch or any gathering.

- 1 deep dish style frozen 9 inch pie crust
- 6 large eggs
- 1/2 cup half & half
- 1 cup shredded sharp white cheddar
- 3 Tbsp shredded Parmesan cheese
- 3 green onions, thinly sliced
- 3 Tbsp snipped chives
- 1/4 tsp salt
- Fresh cracked black pepper to taste
- 5 ounces ham or Canadian bacon, cut in small dice
- 3 large egg yolks
- 1 tbsp lemon juice
- 1/4 tsp Dijon mustard
- 1/2 cup unsalted butter, melted
Instructions
- Preheat the oven to 350°F (175°C) and lightly spray a pie plate with cooking spray.
- Whisk the six large eggs with the half & half until fluffy and well-emulsified.
- Stir in the shredded sharp white cheddar, Parmesan cheese, green onions, chives, diced ham (or Canadian bacon), salt, and pepper.
- Remove the frozen pie crust from the tin and place it into your pie plate.
- Pour the egg mixture into the prepared crust evenly.
- Bake for about 50 minutes, or until golden brown and set in the center.
- Let the quiche cool for at least 15 minutes before slicing.
- Blend the egg yolks, lemon juice, and Dijon mustard until smooth, then drizzle in melted butter until thickened for the hollandaise.
- Serve with hollandaise sauce drizzled over each quiche slice.
Notes
Allow the quiche to cool properly for clean slices. Season to taste before baking.
