Description

A delightful quiche combining fluffy eggs, savory ham, and rich cheeses, topped with luscious homemade hollandaise sauce. Perfect for brunch or any gathering.


Ingredients

  • 1 deep dish style frozen 9 inch pie crust
  • 6 large eggs
  • 1/2 cup half & half
  • 1 cup shredded sharp white cheddar
  • 3 Tbsp shredded Parmesan cheese
  • 3 green onions, thinly sliced
  • 3 Tbsp snipped chives
  • 1/4 tsp salt
  • Fresh cracked black pepper to taste
  • 5 ounces ham or Canadian bacon, cut in small dice
  • 3 large egg yolks
  • 1 tbsp lemon juice
  • 1/4 tsp Dijon mustard
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly spray a pie plate with cooking spray.
  2. Whisk the six large eggs with the half & half until fluffy and well-emulsified.
  3. Stir in the shredded sharp white cheddar, Parmesan cheese, green onions, chives, diced ham (or Canadian bacon), salt, and pepper.
  4. Remove the frozen pie crust from the tin and place it into your pie plate.
  5. Pour the egg mixture into the prepared crust evenly.
  6. Bake for about 50 minutes, or until golden brown and set in the center.
  7. Let the quiche cool for at least 15 minutes before slicing.
  8. Blend the egg yolks, lemon juice, and Dijon mustard until smooth, then drizzle in melted butter until thickened for the hollandaise.
  9. Serve with hollandaise sauce drizzled over each quiche slice.

Notes

Allow the quiche to cool properly for clean slices. Season to taste before baking.
