Description

A deconstructed egg roll packed with flavor, using ground pork and fresh vegetables, perfect for a quick weeknight dinner.


Ingredients

  • 1 lb ground pork
  • 1 cup shredded carrots
  • 2 cups coleslaw mix (cabbage and carrots)
  • 3 green onions, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Optional: sesame seeds for garnish

Instructions

  1. In a large skillet, heat sesame oil over medium heat.
  2. Add the ground pork to the skillet and cook until browned, breaking it apart as it cooks.
  3. Stir in the garlic and ginger, cooking until fragrant.
  4. Add the shredded carrots and coleslaw mix, stirring to combine and cooking until the vegetables are tender.
  5. Pour in the soy sauce, stirring to incorporate all ingredients.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with sliced green onions and sesame seeds if desired.

Notes

Customize with your favorite vegetables or swap ground pork for chicken or tofu. Perfect with steamed jasmine or cauliflower rice.
