Description

Delightful strawberry crumb bars with a buttery crust, perfect for summer desserts.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1/2 cup butter, melted
  • 1/4 teaspoon salt
  • 2 cups fresh strawberries, chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish.
  2. In a bowl, mix together the flour, oats, brown sugar, white sugar, melted butter, and salt until crumbly.
  3. Take half of the crumb mixture and press it firmly into the bottom of the baking dish.
  4. In another bowl, combine the chopped strawberries, lemon juice, cornstarch, and vanilla.
  5. Spread the strawberry mixture over the crust.
  6. Crumble the remaining oat mixture generously over the strawberry filling.
  7. Bake for 30-35 minutes until the top is golden brown and bubbly.
  8. Allow to cool before slicing into squares.

Notes

Serve with vanilla ice cream or whipped cream for an extra treat. Store leftovers in the refrigerator for up to five days or freeze for up to three months.
