- 1 bell pepper, sliced
- 1 onion, sliced
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Tortillas for serving
- Optional toppings: sour cream, guacamole, salsa
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the sliced chicken, bell pepper, onion, olive oil, chili powder, cumin, smoked paprika, salt, and pepper in a large bowl, mixing well.
- Spread the mixture in a single layer on a sheet pan.
- Bake in the preheated oven for 20-25 minutes.
- Serve the chicken and veggies in warm tortillas with optional toppings.
