Description

A delightful pasta salad inspired by the flavors of the New Orleans muffuletta sandwich, perfect for summer gatherings.


Ingredients

  • 8 ounces pasta (fusilli or rotini)
  • 1/2 cup green olives, sliced
  • 1/2 cup black olives, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup diced salami
  • 1/2 cup diced provolone cheese
  • 1/4 cup red onion, diced
  • 1/2 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente, then drain and let cool.
  2. Combine the cooled pasta with green and black olives, cherry tomatoes, diced salami, provolone cheese, and red onion in a large bowl.
  3. Whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper in a separate bowl.
  4. Pour the dressing over the pasta mixture and toss to combine thoroughly.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Add a splash of olive oil or vinegar to freshen it up if needed.
