- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 cup corn (frozen or canned)
- 2 tablespoons taco seasoning
- Salt and pepper to taste
- Toppings: shredded cheese, sour cream, chopped cilantro, avocado (optional)
Instructions
- Brown the ground turkey in a large skillet over medium heat until browned. Drain excess fat if necessary.
- Sauté the onion, garlic, and bell pepper until softened.
- Combine the black beans, diced tomatoes, corn, and taco seasoning.
- Simmer for about 10 minutes, allowing flavors to meld.
- Season with salt and pepper to taste.
- Serve hot, topped with cheese, sour cream, cilantro, and avocado if desired.
Notes
