Description

Ingredients

  • 1 lb ground turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup corn (frozen or canned)
  • 2 tablespoons taco seasoning
  • Salt and pepper to taste
  • Toppings: shredded cheese, sour cream, chopped cilantro, avocado (optional)

Instructions

  1. Brown the ground turkey in a large skillet over medium heat until browned. Drain excess fat if necessary.
  2. Sauté the onion, garlic, and bell pepper until softened.
  3. Combine the black beans, diced tomatoes, corn, and taco seasoning.
  4. Simmer for about 10 minutes, allowing flavors to meld.
  5. Season with salt and pepper to taste.
  6. Serve hot, topped with cheese, sour cream, cilantro, and avocado if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze for up to 2 months.
